3 Holiday Pizzas

A pepperoni wreath pizza with fresh basil and bell pepper, a ricotta and mozzarella cheese snowman pizza, and a pesto tree pizza with fresh basil and cherry tomatoes

Makes 1 large wreath, 2 small (1 snowman), & 1 medium tree pizza

Dough
Ingredients
  • 1 package active dry yeast
  • 1 ½ teaspoon granulated sugar
  • 3 cups Bread Flour
  • 1 cup warm water
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt

  • Stand mixer with hook attachment
  • Rolling pin
  • Bench flour

Wreath
Ingredients
  • 14 ounces tomato sauce
  • 6 ounces tomato paste
  • ½ cup water
  • ½ teaspoon chopped fresh oregano
  • 1 tablespoon chopped fresh basil
  • ½ teaspoon chopped fresh thyme
  • 1 head garlic
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Red bell pepper
  • Pepperoni
  • Basil
  • ½ cup mozzarella
Equipment
  • Medium pot
  • Pizza Pans

  • Small cutting board
  • Knife

  • 6” cake pan

Snowman
Ingredients
  • 1 cup mozzarella
  • Olive oil, for drizzling
  • ½ cup ricotta
  • Sliced black olives
  • Orange bell pepper
  • Red bell pepper
Equipment
  • Baking sheet lined with parchment
  • Small spoon
  • Small cutting board
  • Knife

Tree
Ingredients
  • 2 cups packed fresh basil
  • ¼ cup lemon juice
  • ¼ cup pine nuts
  • 2 cloves garlic
  • ⅔ cup extra virgin olive oil
  • ½ cup grated parmesan
  • Kosher salt and freshly ground black pepper
  • Basil
  • Cherry tomatoes
  • Yellow bell pepper

  • Baking sheet lined with parchment

Pizza Dough
  1. In a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
  2. Stir in 1 cup of flour until a thick paste forms. Add salt, oil, and remaining flour. Let rest for 5 minutes.
  3. Use your hands to work dough into a ball and then set aside.
Pizza Sauce
  1. Preheat oven to 350ºF.
  2. Cut the head off of a large garlic bulb, exposing the cloves and drizzle with olive oil. Wrap in foil and heat in the oven for 45 minutes to an hour.  Remove garlic from package and cool slightly.
  3. In a small saucepan, whisk the sauce, paste and water until smooth. Mix in roasted garlic, fresh herbs, salt and pepper.
  4. Bring to a simmer and cook for 5 minutes or until thickened slightly.
Time to decorate!
  1. Preheat oven to 350ºF.
  2. Cut a red bell pepper into thin strips and then cut a small square (PICTURE at 5:11).
  3. Roll dough out into a large circle and then position it into a round pizza pan. Cut a large circle out of the middle (Picture at 4:33).
  4. Spread a thin layer of pizza sauce on the pizza and then sprinkle shredded mozzarella. Evenly space pepperonis around the pizza ring then arrange the bell pepper strips into a bow at the top.
  5. Bake for 12 to 18 minutes.
  6. Allow to cool slightly and then arrange basil leaves around the wreath.
  7. TaDa! You may not be able to hang this wreath on your door, but you can enjoy it with the people you hang with!

  1. Make pizza dough as instructed in Wreath Pizza recipe above.
  2. Preheat oven to 350ºF.
  3. Cut bell peppers into strips.
  4. Roll dough out onto a floured surface and then use a 6-inch and 8-inch cake pan to cut out rounds from the dough.
  5. On a prepared baking sheet, overlap the smaller circle on the large circle to create a snowman shape.
  6. Drizzle the snowmen with a little olive oil and then spread ricotta cheese to cover the pizzas.
  7. Sprinkle grated mozzarella over the top. Place black olive slices for buttons and eyes, orange bell pepper for a nose and arrange the red bell pepper strips into a scarf.
  8. Bake for 12 to 18 minutes.
  9. Remove from oven and allow to cool.
  10. TaDa! This has got to be the toastiest snowman ever!

  1. Make pizza dough as instructed in Wreath Pizza recipe above.
  2. Use a food processor to combine basil, lemon juice, pine nuts and garlic. Pulse until coarsely chopped. Add oil and then process again.
  3. Add cheese and sprinkle in salt and pepper. Pulse until well combined. Use immediately or store in an airtight container until ready to use.
Time to decorate!
  1. Preheat oven to 350ºF.
  2. Cut cherry tomatoes in half. Use a cookie cutter to cut a star from the yellow bell pepper.
  3. Roll out dough onto a floured surface to ¼ an inch thick. Transfer onto a parchment sheet and cut into a tree shape. Place onto baking sheet.
  4. Prick the dough with a fork and cover lightly with pesto. Top with basil, tomatoes and yellow bell pepper star.
  5. Bake for 12 to 18 minutes.
  6. TaDa! This is the perfect tree to be rockin' around for the holidays!
