Ingredients
  • 2 tablespoons butter, melted
  • 1/4 cup milk
  • 1 egg at room temperature
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons unsweetened cocoa powder
  • 1/3 cup self rising flour
  • 2 tablespoons sugar
  • 2 tablespoons brown sugar
  • 1/4 cup mini semi sweet chocolate chips
  • Pinch of salt
  • Powdered sugar

Ingredients
  • 1/4 cup self rising flour
  • 1 tablespoon brown sugar
  • 1 teaspoon sugar
  • 1/4 teaspoon allspice
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 1 tablespoon milk
  • 3 tablespoons applesauce
  • 1 apple
  • Ground cinnamon
  • Cinnamon stick

Let's get started!
  1. In a small bowl, whisk together flour, espresso powder, salt, and sugars.
  2. Whisk in egg, milk and coconut oil until smooth.
  3. Divide batter evenly into 2 mugs and microwave each separately on high for about 1 minute. If cake is not set, microwave in intervals of 10 seconds until fully cooked.
  4. Once completely cool, pipe a dollop of whipped cream in the center of each cake and then top with an espresso bean.

  1. In a small bowl, whisk together flour, cocoa powder, salt, and sugars.
  2. Whisk egg, milk, vanilla and melted butter until smooth.
  3. Stir in chocolate chips.
  4. Divide batter evenly into 2 mugs and microwave each separately on high for about 1 minute. If cake is not set, microwave in intervals of 10 seconds until fully cooked.
  5. Once completely cool, dust some powdered sugar on top.

  2. In a small bowl, whisk together flour, sugars, spices, and salt.
  3. Whisk in milk and applesauce until smooth.
  4. Stir in cubed apples.
  5. Pour batter into a mug and microwave on high for about 1 minutes. If cake is not set, microwave in intervals of 10 seconds until fully cooked.
  6. Allow to cool slightly and then sprinkle some ground cinnamon on top. Place a cinnamon stick inside.
