Frozen 2 Princess Cakes

 

Ro recreates her most viewed video ever with the best yellow cake recipe decorated to look like princess Elsa and princess Anna!

Yield: Makes one 6-inch three layer cake

 

Things you'll need

Ingredients
  • 5 ¼ cups cake flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 7 large eggs
  • 3 ½ cups granulate sugar
  • 3 ½ teaspoons vanilla extract
  • 1 teaspoon lemon extract
  • 2 sticks (8 ounces) unsalted butter, melted
  • 1 cup whole milk, warmed
  • ¾ cup buttermilk, warmed
Decorations for Elsa:
  • 1 batch buttercream Frosting
  • Silver sanding sugar
  • Powdered Sugar
  • Light blue fondant
  • Medium blue fondant
  • Dark blue fondant

Decorations for Anna:

  • 1 batch buttercream Frosting
  • Powdered Sugar
  • Purple fondant
  • Pink fondant
  • Black fondant
  • Brown Fondant
  • Gold buttercream

Let's get started!

  1. Preheat the oven to 350°F. Grease the three princess cake pans.
  2. In a medium bowl, whisk together the cake flour, baking powder and salt.
  3. In a large bowl, with an electric mixer, beat the eggs, granulated sugar, vanilla, and lemon extract until doubled in volume, 2 to 3 minutes.
  4. In a small bowl, stir together the melted butter, milk and buttermilk.
  5. Mix the flour mixture into the egg mixture until well combined, then whisk in the milk mixture until smooth. 
  6. Fill each pan two-thirds full with batter (using about 3 ½ cups per pan) and bake until a wooden pick inserted into the center comes out clean, 35 to 40 minutes.
  7. Let cool in the pans for 15 minutes, then turn out of the pans onto a wire rack to cool completely.
  8. Level off the top of each cake with a cake leveler or a large serrated knife.
  9. Stack the cakes in ascending order, leveled side down, with a thin layer of frosting in between the cake layers.
  10. Crumb coat the cake and refrigerate for 30 minutes to set.

Time to decorate!

For Elsa:

  1. On a flat surface sprinkled with powdered sugar, roll out the medium blue fondant to a 16-inch round,1/4 inch thick.
  2. Drape the fondant over the cake and form ruffles on the bottom of the dress. Cut a triangle in the front and save the cutout piece.
  3. Roll out the light blue fondant and place the triangle on top and cut the same shape using a knife.
  4. Place the light blue triangle on the cake and gently press the seams together.
  5. Using the medium blue fondant, roll out a rectangle and cut a "V" shape for the front and two "U" shapes for her arms. Place a small light blue triangle on her chest. Cover the arms with the medium blue fondant.
  6. Place the doll in the middle of the cake and use the dark blue fondant to make a thick strip to cover the seams.
  7. Add more details using the buttercream and silver sanding sugar.

For Anna:

  1. On a flat surface sprinkled with powdered sugar, roll out the medium blue fondant to a 16-inch round,1/4 inch thick.
  2. Drape the fondant over the cake and form ruffles on the bottom of the dress. Cut a triangle in the front and save the cutout piece.
  3. Roll out the black fondant and place the triangle on top and cut the same shape using a knife.
  4. Place the black triangle on the cake and gently press the seams together.
  5. Cover the doll's torso with black fondant and take two strips of purple fondant for her vest. Cover the arms with more black fondant.
  6. Place the doll in the middle of the cake and use the purple fondant to make a thick strip to cover the seams.
  7. Make two strips of the pink fondant and place it in the front of the dress.
  8. Add more details using the gold buttercream and the brown fondant for her belt.
