Nutter Butter Cookies
Things you'll need
Cookies- 1/2 cup unsalted butter
- 1/2 cup + 2 tablespoons granulated sugar
- 1/4 cup packed brown sugar
- 1 egg, room temperature
- 1 teaspoon vanilla extract
- 1/2 cup creamy peanut butter
- 1 1/2 cup + 2 tablespoons flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt

- Peanut cookie cutter
- 1 cup creamy peanut butter
- 3/4 cup powdered sugar
- 1/4 heavy cream
- 1 1/4 teaspoon vanilla extract
- 1/4 teaspoon salt
Let's get started!
- Cookies: In a medium bowl, combine the flour, baking soda, baking powder and salt.
- In a medium bowl using a hand mixer, cream together the butter and sugar until it's smooth. Add the eggs and vanilla, mix on high for 1 minute.
- Add the peanut butter and mix until combined.
- Add the dry ingredients and mix until combined.
- Split the dough in half and form into disks. Wrap tightly in plastic wrap and chill for 3 hours.
- Roll out the dough between two silicon mats to 1/8" thick. Chill for 30 minutes.
- Press the peanut texture mold into surface evenly to create texture. Freeze for 30 minutes.
- Preheat the oven to 350F°.
- Using a template or peanut cookie cutter, cut out peanut shapes and place on a parchment lined baking tray.
- Bake fro 12 to 15 minutes.
- Filling: In a medium bowl using a hand mixer, mix together the peanut butter, cream, vanilla and salt until smooth. Add the powdered sugar and mix until combined. Scoop into a small piping bag.
- Pipe filling onto half the cookies, about 1/8" thick, on half the cookies. Top with another cookie.
