Homemade Nutter Butters

Makes 24 Nutter Butter Cookies

 

Things you'll need

Cookies
  • 1/2 cup unsalted butter
  • 1/2 cup + 2 tablespoons granulated sugar
  • 1/4 cup packed brown sugar
  • 1 egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup creamy peanut butter
  • 1 1/2 cup + 2 tablespoons flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

  • Peanut cookie cutter
Filling
  • 1 cup creamy peanut butter
  • 3/4 cup powdered sugar
  • 1/4 heavy cream
  • 1 1/4 teaspoon vanilla extract
  • 1/4 teaspoon salt

 

Let's get started!

  1. Cookies: In a medium bowl, combine the flour, baking soda, baking powder and salt. 
  2. In a medium bowl using a hand mixer, cream together the butter and sugar until it's smooth. Add the eggs and vanilla, mix on high for 1 minute.
  3. Add the peanut butter and mix until combined. 
  4. Add the dry ingredients and mix until combined. 
  5. Split the dough in half and form into disks. Wrap tightly in plastic wrap and chill for 3 hours.
  6. Roll out the dough between two silicon mats to 1/8" thick. Chill for 30 minutes.
  7. Press the peanut texture mold into surface evenly to create texture. Freeze for 30 minutes.
  8. Preheat the oven to 350F°. 
  9. Using a template or peanut cookie cutter, cut out peanut shapes and place on a parchment lined baking tray. 
  10. Bake fro 12 to 15 minutes. 
  11. Filling: In a medium bowl using a hand mixer, mix together the peanut butter, cream, vanilla and salt until smooth. Add the powdered sugar and mix until combined. Scoop into a small piping bag.
  12. Pipe filling onto half the cookies, about 1/8" thick, on half the cookies. Top with another cookie.
