Smart Cookie Macarons
Ingredients
- 3 egg whites
- ¾ cups almond flour
- 1 1/3 cups powdered sugar
- 2 tablespoons granulated sugar
- 1/3 cup ground spiced shortcrust biscuits
- Mini chocolate chips
- Black, white and pink royal icing
- ½ cup chocolate chips
- ½ cup cream
- 1 cup ganache
- 2 tablespoons cookie butter
- Large mixing bowl
- Medium mixing bowl
- Sifter
- Hand mixer
- Whisk
- Rubber spatula
- Cookie sheet lined with parchment
- Decorating bags
- #1 and #806 tips
- Wax paper
- Tape
- Glasses template
Let's get started!
- Preheat oven to 300ºF.
- Sift powdered sugar, almond meal, and ground cookies into a medium bowl.
- Whip egg whites until frothy and then continue beating on low. Slowly add granulated sugar and beat until soft peaks form.
- Use a spatula to fold in about 1/3 of the almond mixture and and then fold in the next 1/3. Fold in remaining 1/3 (PICTURE at 1:46).
- Spoon the batter into a decorating bag fitted with an #806 tip and pipe rounds about ¾ an inch apart on the parchment paper.
- Tap the baking sheet to remove any air bubbles from the macaroons and then place mini chocolate chips into cookies.
- Let set for 30 minutes to an hour before baking so that cookies develop a skin.
- Place the cookie sheet in another cookie sheet to help insulate the bottom, and bake for 15 to 18 minutes.
Time to decorate!
- Make ganache by heating cream in a sauce pan and then pouring it onto chocolate chips. Whisk well and then mix in cookie butter.
- Scoop mixture into piping bags and then pipe into the cookies.
- Use royal icing and a #1 tip to pipe glasses onto wax paper and then allow to dry for 8 to 12 hours (PICTURE at 4:54).
- Top cookies with glasses and then use white, black and pink royal icing with a #1 tip to pipe on eyes and cheeks (PICTURE at 5:06). Add mini chocolate chips.
