Homemade Donettes

 

Mini powdered donuts, like Hostess Donettes

Makes 30 donuts

 

Things you'll need

Ingredients
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 1 1/4 teaspoon vanilla extract
  • 3 eggs yolks
  • 1/2 cup unsweetened whole Greek yogurt, room temperature
  • 1 cup + 2 tablespoons all-purpose flour
  • 2 tablespoons corn starch
  • Vegetable oil, for frying
  • 1 1/2 cup powdered sugar
Equipment
  • Candy thermometer
  • Heavy bottomed pot, for frying

 

Let's get started!

  1. In a medium bowl, combine the flour, sugar, baking powder, baking soda and salt. 
  2. In a separate bowl, combine the vanilla, egg yolks, and Greek yogurt. Stir in the melted butter. 
  3. Pour the yogurt mixture into the flour mixture, and stir with a wooden spoon until a stiff dough is formed. 
  4. Transfer the dough into a piping bag fitted with a round tip #2A (about 1/2" wide). 
  5. Pipe small circles onto parchment squares. 
  6. Heat the oil to 365°F, and line a baking sheet with paper towels.
  7. Fry the donuts until golden brown, about 30 seconds on each side. Remove the parchment paper with tongs after 20 seconds.
  8. Place the fried donuts on the paper towels to drain and cool, 10-15 minutes. 
  9. Toss the donuts in powdered sugar, and shake off any excess. Re-toss in the powdered sugar.
