  2. In a medium mixing bowl, whisk together flour, cocoa powder and baking soda.
  3. In a large mixing bowl, use a hand mixer to beat butter and salt until light and fluffy. Beat in egg yolk and vanilla.
  4. Combine the flour mixture and the chocolate with the butter mixture and mix until well combined. Form the dough into a disc and wrap it in plastic. Refrigerate until completely chilled.

Checkerboard
  1. Create a template by drawing a 5-inch by 15-inch rectangle onto a piece of parchment paper.
  2. Shape the vanilla dough neatly inside the rectangle and then gently flatten with a rolling pin. Wrap with parchment paper and return it to the fridge.
  3. Repeat steps 1 and 2 with chocolate sable.
  4. Remove vanilla dough and use a ruler to measure out ½-inch markers on the short sides of the rectangle (PICTURE at 4:22).
  5. Use a sharp knife and a ruler to draw a line across each half-inch mark. Use these scored lines as guides to cut the rectangle into strips (PICTURE at 4:27).
  6. Repeat steps 4 and 5 with chocolate dough. Remember to save your excess cookie dough!
  7. Use egg wash to paint the insides of each strip of dough and then glue the strips together, alternating chocolate and vanilla (PICTURE at 5:16). Wrap in parchment and freeze for 20 minutes.
  8. Cut cookie squares about ½-inch thick. Place cookies about an inch apart on a parchment-lined baking sheet and bake for 12 to 15 minutes.
