WICKED Glinda & Elphaba Princess Cakes

Makes (1) Glinda Princess Cake & (1) Elphaba Princess Cake

 

Things you'll need

Vanilla Cake (for 1 cake)
  • 3 sticks (12oz) unsalted butter, room temperature
  • 3 cups granulated sugar
  • 6 eggs
  • 2 tablespoons vanilla extract
  • 1/2 teaspoon almond extract
  • 4 cups + 2 tablespoons flour
  • 4 1/2 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 1 1/2 cups milk, room temperature
  • Gel Food Color: Green or Pink
American Buttercream Frosting (for 1 cake)
  • 2 cups (16oz) unsalted butter, room temperature
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 7 cups powdered sugar
  • 3 tablespoons heavy cream
  • Gel Food Color: Green or Pink

Decorations

  • Princess Cake Pans
  • Buttercream: Green & Pink
  • Fondant: Purple, black, pink, white
  • Edible luster dust: Purple, silver
  • Gel Food Color: Black
  • Corn syrup
  • Corn Starch
  • Tylose powder
  • Clear extract

Equipment

  • Dolls: Elphaba & Glinda
  • Food-safe plastic wrap
  • Two 12" cake boards
  • Ribbon: Pink, black
  • Rolling pin
  • Boba straws
  • Small brushes
  • Silicone wood texture mold
  • Cake turn table
  • Fondant ball tool
  • Round piping tips: Various sizes

 

Let's get started!

Vanilla Cake

  1. Preheat the oven to 325F°. Grease and line the Princess Cake Pans. 
  2. In a small bowl, whisk together the flour, baking powder and salt. 
  3. In a large bowl with a hand mixer, cream together the butter, sugar, extracts, and food color (pink or green) until light and fluffy, about 6-8 minutes.
  4. Add the eggs to the butter mixture, mix partially.
  5. Alternate adding the flour mixture and milk to the butter mixture, in 3 additions starting and ending with the flour. 
  6. Pour the batter into the prepared pans. Bake for 30-40 minutes, or until a toothpick comes out clean. 
  7. Repeat with other food coloring. 

American Buttercream Frosting

  1. In a stand mixer fitted with a paddle attachment, beat the butter on medium speed for 30 seconds. 
  2. Mix in the vanilla and salt on low speed.
  3. Slowly add the powdered sugar while mixing on slow. Halfway through add the heavy cream, then continue to add remaining powdered sugar.
  4. Mix on low until fully incorporated.
  5. Add in the food coloring (pink or green). 
  6. Repeat with other food coloring. 

 

Time To Decorate!

Glinda

  1. Stack and fill the pink cakes with the pink buttercream on a cake plate. 
  2. Wrap Glinda doll waist down in food-safe plastic wrap, and place in center of the cake. 
  3. Frost the entire cake with pink buttercream, and smooth. Chill in the fridge for 30 minutes.
  4. Roll out the pink fondant to 1/8" thick to use for the gown's bottom skirt, corset and top skirt.
  5. Bottom Skirt: Cut gown skirt patterns. Place the fondant dress pieces on the cake, creating ripple effects using the boba straws. Layer the pink fondant pieces until the cake portion is covered. 
  6. Corset: Use rolled pink fondant to cut out a torso template. Make small ruffles above the bust using the ball tool and attach to inside of the corset using a small amount of water as an adhesive. Brush water on the inside of the torso fondant and wrap corset around doll. 
  7. Top Skirt: Cut the rolled pink fondant into small semi-circles for the top skirt. Use a brush and water to attach and cover any bottom skirt seams. 
  8. In a small bowl, mix a small amount of clear extract and silver luster dust. Dip the various piping tips in, and then press on the dress to create bubble designs.

Elphaba 

  1. Stack and fill the green cakes with the green buttercream on a cake plate. Carve the sides of the cake for a more slender dress shape. 
  2. Wrap Glinda doll waist down in food-safe plastic wrap, and place in center of the cake.
  3. Frost the entire cake with green buttercream, and smooth. Chill in the fridge for 30 minutes.
  4. Roll out the purple fondant to 1/8" thick to use for the dress's skirt and bodice. Press the silicone wood texture mold to create vertical patterns in the fondant. 
  5. Skirt: Cut out skirt pattern, and place the fondant skirt around the cake. Trim off excess. 
  6. Bodice: Cut out a front and back bodice and two sleeves tapered at the end. Use a brush and small amount of water to attach pieces around doll. Trim off excess. 
  7. Using a dry brush, brush the edible purple sprinkles all over the purple fondant dress.
  8. Using a dry brush, dip it into the black gel food color and brush the color horizontally across the dress. 
  9. Roll out the black fondant, and cut out a top skirt and cape. Using water as an adhesive, attach the top skirt and cape to the cake.
