Homemade Circus Animal Cookies Recipe

Things you'll need

Ingredients
  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1 1/2 sticks (12 tablespoons) salted butter, room temperature
  • 3/4 cup powdered sugar
  • 1 egg, room temperature
  • 1 1/4 teaspoon vanilla extract
  • 1.75"-2.25" animal cookie cutters: LINK 
Decoration
  • White coating chocolate
  • Pink coating chocolate
  • Rainbow ball sprinkles

 

Let's get started!

  1. Cookies: In a medium bowl, whisk the flour and baking soda together. Set aside.
  2. In a large bowl, with a hand mixer, beat the butter until creamy. Add the powdered sugar and beat until smooth. Add the vanilla and egg, mix until combined.
  3. Add the dry ingredients and mix until just combined.
  4. Split the dough in half and shape into disks. Wrap disks tightly with plastic wrap and refrigerate for at least 30 minutes. 
  5. Roll out the dough to 1/8" thick, then chill for 1 hour.
  6. Preheat the oven to 350F°.
  7. Once dough is chilled, cut out animal shapes and place on parchment lined baking sheet.
  8. Bake 8 minutes. Flatten with an offset spatula while warm. 
  9. Coating: Melt the white chocolate by microwaving in a heat safe bowl in 30 second increments, mixing between each one - about 3 minutes.
  10. Line a baking sheet with parchment paper. 
  11. Using a fork, dip a cookie in the melted chocolate, remove and tap on the edge of the bowl so excess chocolate will drip off. Use a second fork to slide the cookie onto the lined cookie sheet. Sprinkle the rainbow sprinkles evenly. Repeat with half of the cookies. 
  12. Melt the pink chocolate and repeat the process for remaining cookies.
