Homemade Circus Animal Cookies
Things you'll need
Ingredients- 2 cups flour
- 1/2 teaspoon baking soda
- 1 1/2 sticks (12 tablespoons) salted butter, room temperature
- 3/4 cup powdered sugar
- 1 egg, room temperature
- 1 1/4 teaspoon vanilla extract
- 1.75"-2.25" animal cookie cutters: LINK
- White coating chocolate
- Pink coating chocolate
- Rainbow ball sprinkles
Let's get started!
- Cookies: In a medium bowl, whisk the flour and baking soda together. Set aside.
- In a large bowl, with a hand mixer, beat the butter until creamy. Add the powdered sugar and beat until smooth. Add the vanilla and egg, mix until combined.
- Add the dry ingredients and mix until just combined.
- Split the dough in half and shape into disks. Wrap disks tightly with plastic wrap and refrigerate for at least 30 minutes.
- Roll out the dough to 1/8" thick, then chill for 1 hour.
- Preheat the oven to 350F°.
- Once dough is chilled, cut out animal shapes and place on parchment lined baking sheet.
- Bake 8 minutes. Flatten with an offset spatula while warm.
- Coating: Melt the white chocolate by microwaving in a heat safe bowl in 30 second increments, mixing between each one - about 3 minutes.
- Line a baking sheet with parchment paper.
- Using a fork, dip a cookie in the melted chocolate, remove and tap on the edge of the bowl so excess chocolate will drip off. Use a second fork to slide the cookie onto the lined cookie sheet. Sprinkle the rainbow sprinkles evenly. Repeat with half of the cookies.
- Melt the pink chocolate and repeat the process for remaining cookies.
