Baby Blocks Name Reveal Cakes

 

Adorable and delicious pound cake cubes decorated with American Buttercream and fondant to look like realistic baby blocks! Cut them open to reveal the letters of the new baby's name!

Makes 6 fondant decorated block pound cakes with letters inside.

 

Things you'll need

Ingredients: Red Pound Cake (Letters)
  • 3 1/4 cups flour
  • 3/4 teaspoon salt
  • 2 cups butter, room temperature
  • 3 1/4 cups sugar
  • 6 eggs
  • 6 egg yolks
  • 1 tablespoon vanilla extract
  • 1 teaspoon almond extract
  • 1 1/2 tablespoons red food color

Ingredients: Pound Cake (2 Cubes)

  • 1 1/2 cups + 2 tablespoon flour
  • 1/4 teaspoon salt
  • 1 cup butter, room temperature
  • 1 1/2 cups + 2 tablespoons sugar
  • 3 eggs
  • 3 egg yolks
  • 1/2 tablespoon vanilla extract
  • 1/2 teaspoon almond extract
Decoration
  • 1 cup American buttercream
  • Fondant: White and light blue
  • Shortening
  • Flour
  • Tylose

Equipment

  • (2) 4"x4" pans
  • (1) 9"x13" pan
  • Letter cookie cutters

Let's get started!

Red Pound Cake (Letters)

  1. Preheat oven to 325F. Coat the 9"x13" pan with shortening and thin layer of flour. 
  2. In a stand mixer fitted with a paddle attachment, cream together the butter and sugar until light and fluffy, about 5-8 minutes. 
  3. Add the red food color and mix on low. 
  4. In a medium bowl, whisk the eggs, egg yolks, salt, vanilla and almond extracts until well combined. 
  5. Slowly pour in the the egg mixture to the butter mixture on low speed. Scrape the bottom as needed. 
  6.  Mix the egg and butter mixture for 1 minute on medium-low speed. 
  7. On low speed, add the flour 1/4 cup at a time. Scrape the bottom as needed. 
  8. Pour the batter into the prepared pan and bake until toothpick comes out clean, about 1 hour, 20 minutes.
  9. Let cool in pan for 15 minutes, then remove and cool completely in the fridge. 
  10. Slice cake into 1/2" layers. Use desired letter cookie cutters to make 7-10 of each per square pan. Chill in freezer for at least 30 minutes.

Pound Cake: Cubes

  1. Preheat oven to 325F. Coat 2 square 4" pans with shortening and coat with thin layer of flour.
  2. In a stand mixer fitted with a paddle attachment, cream together the butter and sugar until light and fluffy, about 5-8 minutes.
  3. In a medium bowl, whisk together the eggs, egg yolks, salt, vanilla and almond extracts until combined.
  4. Slowly pour in the the egg mixture to the butter mixture on low speed. Scrape the bottom as needed. 
  5.  Mix the egg and butter mixture for 1 minute on medium-low speed. 
  6. On low speed, add the flour 1/4 cup at a time. Scrape the bottom as needed. 
  7. Using a piping bag for control, pipe 1/2" batter into a prepared pan and place a row of red letters in the center. Then pipe batter all around the letters. Repeat with a second cake and set of letters. 
  8. Bake until a toothpick comes out clean, about 1 hour 20 minutes.
  9. Let cool in the pans for 15 minutes, then turn out and let cool completely in the fridge. 
  10. Repeat for as many letters as needed. 
  11. Trim the cakes to be around 2"x2"x2"cubes.

Time to decorate!

  1. Place cake cube on 2 3/4" cake board and ice with American buttercream. Tip: Keep track of the front of the cake for the letter to be reveal correctly.
  2. Roll out light blue fondant (optional: mixed with 1/2 teaspoon of tylose) into about 3" squares. Place on all 5 sides of the cake and trim the excess fondant. Use water to seal the edges. 
  3. Roll out 1/4" strips of light blue fondant and place along the front edge using water as an adhesive.   
  4. Roll out white fondant (optional: mixed with 1/8 teaspoon of tylose). Cut out "BABY #2"using an exacto knife. 
  5. Place letters on the front of each cake using water as an adhesive.  
  6. Cut open the reveal the baby name!
