Candy Sushi
Things you'll need
Ingredients- 2 eggs
- 1 cup milk
- 1 tsp salt
- 1 1/4 cup sugar
- 2 1/2 cups sifted flour
- 3 tbsp matcha powder
- 2 tsp almond extract
- 3 tsp baking powder
- 1/2 cup vegetable oil
- 1 bag finely shaved coconut
- vanilla frosting
- Jujubes
- Candy Octopus
- Candy Orange Slices
- Haribo Gummi Rasberries
- Orange Candy Sugar Beads
- Assorted Swedish Fish
- Green Candy Straws
- Mini muffin pan
- Mini muffin liners
Let's get started!
- Preheat the oven to 350F. Line the mini muffin pan with the mini cupcake liners.
- In a large bowl, whisk together all the dry ingredients until well combined.
- Add the oil to the milk and mix well.
- Add the wet ingredients into the dry ingredients bowl and beat well with a hand mixer.
- Add the two eggs, almond extract and matcha powder to the batter and mix again.
- Fill the cupcake liners about 2/3 full then bake in the oven for 9 minutes. Let it cool completely.
Time to decorate!
- Place your frosting in a piping bag.
- Level the tops of the cupcakes using a knife.
- Pipe a thin layer of frosting then dip the top on the shredded coconut to cover it completely. Repeat this step to the rest of the cupcakes except for 4 cupcakes.
- Dip the 4 cupcakes in the orange candy balls to resemble fish eggs.
- Decorate the candy sushi with the different types of candy to make them look like sushi.
