Candy Sushi

 

Learn how to make this easy Candy Sushi Cupcakes inspired by the Nintendo DS game 'Sushi Go-Round'!

Yield: makes 2 dozen mini cupcakes

 

Things you'll need

Ingredients
  • 2 eggs
  • 1 cup milk
  • 1 tsp salt
  • 1 1/4 cup sugar
  • 2 1/2 cups sifted flour
  • 3 tbsp matcha powder
  • 2 tsp almond extract
  • 3 tsp baking powder
  • 1/2 cup vegetable oil
  • 1 bag finely shaved coconut
  • vanilla frosting
  • Jujubes
  • Candy Octopus
  • Candy Orange Slices
  • Haribo Gummi Rasberries
  • Orange Candy Sugar Beads
  • Assorted Swedish Fish
  • Green Candy Straws
Equipment
  • Mini muffin pan
  • Mini muffin liners

Let's get started!

  1. Preheat the oven to 350F. Line the mini muffin pan with the mini cupcake liners.
  2. In a large bowl, whisk together all the dry ingredients until well combined.
  3. Add the oil to the milk and mix well.
  4. Add the wet ingredients into the dry ingredients bowl and beat well with a hand mixer.
  5. Add the two eggs, almond extract and matcha powder to the batter and mix again.
  6. Fill the cupcake liners about 2/3 full then bake in the oven for 9 minutes. Let it cool completely.

Time to decorate!

  1. Place your frosting in a piping bag.
  2. Level the tops of the cupcakes using a knife.
  3. Pipe a thin layer of frosting then dip the top on the shredded coconut to cover it completely. Repeat this step to the rest of the cupcakes except for 4 cupcakes.
  4. Dip the 4 cupcakes in the orange candy balls to resemble fish eggs.
  5. Decorate the candy sushi with the different types of candy to make them look like sushi.
