Captain America Ice Cream Sandwiches

 

I made Captain America Ice Cream sandwiches using different colored cookie dough with vanilla ice cream!

Yield: makes 3 sandwiches

 

Things you'll need

Ingredients
  • 2 1/2 cups flour
  • 1 1/4 cups powdered sugar
  • 1/4 cup plus 2 tbsp granulated sugar
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 sticks unsalted butter (room temperature)
  • 1 egg
  • 3/4 tsp vanilla extract
  • Food coloring: red, blue
  • Vanilla ice cream
  • Egg wash: egg white and water
Equipment
  • Circle cookie cutter
  • Star cookie cutter
  • Baking pan
  • Wax paper

Let's get started!

  1. Preheat the oven to 350F degrees.
  2. Line the baking pan with a piece of wax paper.
  3. Spread the vanilla evenly on the pan. Place it in the freezer
  4. In a medium bowl whisk together the flour, baking soda and salt.
  5. In another medium bowl, cream together the butter, granulated sugar and powdered sugar until light and fluffy.
  6. Add the egg and vanilla extract and mix again.
  7. Gradually add the dry ingredients to the wet ingredients until well combined.
  8. Divide the cookie dough into 3 bowls. Tint a small amount of the blue, a medium amount in white or plain dough and a large amount in red.
  9. Wrap the cookie dough in plastic wrap and chill in the fridge.
  10. Optional: roll out a small piece of white dough, cut out stars using the star cookie cutter.
  11. Place the stars on a baking sheet and bake in the oven for 3 minutes. Let it cool completely then set aside.
  12. Roll out the blue dough into a log shape and brush with the egg wash.
  13. Roll out a small amount of the red cookie dough into a square shape, place the blue dough in the middle and wrap the red dough around it using wax paper. Trim the excess dough.
  14. Repeat step 13 and wrap it using the white dough then wrap again with the remaining red dough.
  15. Wrap the entire dough in wax paper and chill in the fridge for 1 hour.
  16. Cut 1/4" discs from the cookie dough and place it on a baking sheet
  17. Increase the oven temperature to 375F degrees then bake for 7-9 minutes. Let it cool completely.

Time to decorate!

  1. Using the cookie cutter, cut out circles from the ice cream pan. Place it on a baking sheet.
  2. Place back in the freezer until read to assemble.
  3. Take three cookies and place three stars in the middle using the cookie icing.
  4. To assemble, take your bottom cookie and place the ice cream on top.
  5. Place the cookie with the star on top.
