3 Easy Halloween Treats

A mini Jack-O-Lantern pumpkin pie, a black bean hummus topped with a spooky spider, and a wicked Avocado Wasabi deviled egg recipe. These Halloween Treats are eerie-thing you want in an appetizer!

Yields 8-12 pies, 2 cups hummus, & 8 deviled eggs

Things you'll need

Jack-O-Lantern Hand Pies
Ingredients Dough
  • 2 ½ cups all purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • ½ vanilla bean
  • ½ cup butter flavored shortening, chilled
  • ½ cup salted butter, chilled
  • 6 tablespoons buttermilk
Filling
  • 1 (15 ounce) can pumpkin puree
  • 1 (11.25 ounce) can sweetened condensed coconut milk
  • 2 eggs
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon ground clove
  • 1/8 teaspoon ground ginger

Spicy Spooky Spider Dip
Ingredients
  • ½ cup tahini
  • 4 tablespoons lemon juice
  • 2 tablespoons lime juice
  • 2 tablespoons garlic, minced
  • 5 tablespoons olive oil
  • 2 teaspoons cumin
  • ½ teaspoons chili powder
  • 2 cans black beans, drained and washed
  • Salt & pepper to taste
Equipment

Decoration
  • Sour cream in decorating bag fitted with a #2 tip
  • Black olives
  • Red bell pepper

Avocado Wasabi Deviled Eggs
Ingredients
  • 4 eggs
  • ½ avocado, seeded and peeled
  • 2 teaspoons lime juice
  • 1 teaspoon wasabi
  • Salt and pepper to taste
  • Red bell pepper strips

  • Small sauce pan
  • Medium bowl of ice water
  • Small bowl
  • Electric hand mixer
  • Rubber spatula
  • Decorating bag fitted with #2A tip
  • Cutting board & knife

Halloween Pumpkin Pies from Rosanna Pansino
Jack-O-Lantern Hand Pies
Dough
  1. In a large bowl combine flour, sugar, vanilla bean, and salt.
  2. Combine cubed butter and shortening and work between fingers until the mixture resembles coarse meal.
  3. Drizzle in ice-cold buttermilk and then use your hands to form dough.
  4. Divide the dough into 2 disks and then wrap tightly in plastic wrap. Refrigerate for 2 to 24 hours.
Filling
  1. Preheat oven to 350ºF.
  2. In a medium bowl, whisk together all the filling ingredients until smooth.
  3. Pour the filling into a greased pie dish and bake for 60 to 75 minutes.
  4. Roll out dough and cut out pumpkin shapes. On half of the pumpkins, use small and medium triangle cutters to create the face of the Jack-O-Lantern (PICTURE at 3:55).
  5. Scoop 1 tablespoon of filling onto the blank pumpkin cutouts and then spread it just enough to leave a border around the edges.
  6. Brush egg wash around the edges and then top it with a Jack-O-Lantern face. Gently pinch the outer edges together and then brush the top with egg wash.
  7. Bake for 25 minutes. Remove them from oven to egg wash once more and then place them back in the oven for 7 minutes.

Halloween Spider Dip
Spicy Spooky Spider Dip
  1. In a food processor, grind tahini and juices together for about 1 minute and then scrape down the sides.
  2. Add garlic, olive oil, cumin, and chili powder. Process for another minute and scrape.
  3. Pour in black beans and seasoning and process for another minute.
  4. Use a #2 tip to pipe a sour cream spider web design on top of the hummus (PICTURE at 9:06).
  5. For a spider head, cut one olive vertically and then again horizontally. Use one of the vertically cut halves as the spider body.
  6. For spider legs, cut an olive lengthwise then cut 8 thin slices.
  7. Assemble the cut olive pieces on top of the web to create a spider.
  8. Top with small diamond shaped piece of red bell pepper on the body.

Avocado Wasabi Deviled Eggs
Avocado Wasabi Deviled Eggs
  1. Boil eggs over medium heat uncovered and then remove from heat. Cover again and then allow to sit for 10 minutes.
  2. Remove eggs and soak them in a bowl of ice-cold water. Once the eggs have cooled, peel off the shells.
  3. Cut each egg in half vertically and scoop out the yolks. In a medium bowl, combine egg yolks, avocado, wasabi, juice, and salt and pepper. Use a hand mixer to blend until smooth.
  4. Scoop into a decorating bag fitted with a #2A tip and pipe a dollop into the empty egg white halves.
  5. Cut small pieces of red bell pepper into little horn shapes and place on top of the avocado mixture so it looks like devil horns.
