Mint Chocolate Chip Cookies
Ingredients- 1 cup of butter, room temperature
- ¾ cup sugar
- ½ cup packed light brown sugar
- 2 eggs
- 1 to 3 drops green food coloring
- 1 teaspoons peppermint extract
- ½ teaspoon vanilla extract
- 2 ¾ cup all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 5 ounces chocolate mints

Cookies and Cream Cookies
Ingredients- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup butter, room temperature
- ½ cup sugar
- ½ cup packed light brown sugar
- 1 package Cookies ‘N Cream pudding mix
- 2 eggs
- 1 teaspoon vanilla extract
- ½ cup white chocolate chips
- ½ cup mini chocolate chips
- 1 cup Oreos, chopped

Let's get started!
Rocky Road Cookies
- Preheat oven to 350ºF.
- Roughly chop walnuts and set aside.
- In a medium bowl, whisk together flour, baking soda, salt, and cocoa powder.
- In a large bowl, cream together butter and sugars until smooth.
- Add in eggs one at a time, mixing and scraping between each one. Add in extracts.
- Mix in dry ingredients and then fold in nuts.
- Scoop dough into rounds and place on a baking sheet. Gently flatten the top and then bake for 8 minutes.
- Remove cookies from oven and press a few mini marshmallows into each one.
- Bake for another 2 to 3 more minutes until marshmallows have melted slightly.
Mint Chocolate Chip Cookies
- Preheat oven to 350ºF.
- Roughly chop chocolate mints.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream together butter and sugars until smooth.
- Add in eggs one at a time, mixing and scraping between each one.
- Pour in peppermint extract, vanilla, and food coloring and then mix until evenly colored.
- Mix in dry ingredients and then fold in chopped mints.
- Scoop dough onto a baking sheet and bake for 8 minutes.
Cookies and Cream Cookies
- Preheat oven to 350ºF.
- Roughly chop chocolate sandwich cookies to make 1 cup.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream together butter and sugars until smooth and then beat in pudding mix.
- Add eggs one at a time, mixing and scraping between each one. Mix in vanilla extract.
- Scoop dough onto a baking sheet and bake for about 12 minutes.
