Let's get started!
Fresh Cranberry Sauce
- Stir cranberries, juices, zest, and maple syrup in a saucepan. Bring to a boil on medium-high heat, about 3 minutes.
- Once boiling, turn heat to medium-low and cook until cranberries burst and juice is thick, about 10 more minutes, stirring occasionally.
- Remove the sauce from the heat and then stir in cinnamon, salt, and pepper.
Sweet Potato Casserole
- Preheat oven to 350ºF.
- Peel and cut sweet potatoes into cubes.
- Bring a large pot of salted water to a boil and then carefully drop potato cubes into the pot. Bring heat down to medium and cook for about 10 minutes.
- Drain potatoes and then transfer to a large bowl. Use an electric mixer to blend potatoes until smooth.
- In a large bowl, combine the mashed sweet potatoes with sugars, eggs, vanilla, coconut milk, spices, salt and melted butter. Blend thoroughly and then spoon the mixture into the prepared baking dish.
- In a medium bowl, combine brown sugar, flour, melted butter, and chopped pecans until thoroughly combined. Sprinkle the pecan mixture over the top of the sweet potato mixture.
- Bake for 35 to 40 minutes, until the filling is heated through and the topping has slightly browned.
Holiday Stuffing
- Preheat oven to 300ºF.
- Cut a loaf of bread into cubes and then spread them onto a baking sheet lined with parchment paper.
- Bake for 8 to 10 minutes until the bread has dried out. Transfer them into a large bowl.
- Turn oven up to 325ºF.
- In a large pan, melt butter over medium heat. Stir in onion, celery, carrots, rosemary, thyme, parsley, salt and pepper. Cook for 10 to 15 minutes until soft.
- Add the aromatics to the bowl of bread cubes and then stir in vegetable stock, apples, and almonds.
- Transfer stuffing to a buttered casserole dish. Bake for 30 to 40 minutes until the top is slightly crispy and golden brown.
