Earth Day Fruit Tart

A creamy fruit tart decorated to look like the planet earth. A celebratory treat for the world's favorite holiday!

Things you'll need

Ingredients Tart Crust
  • 4 large egg yolks
  • ¼ cup heavy cream
  • 1 teaspoon lemon extract
  • 3 cups all-purpose flour
  • 1 cup unsalted butter, cold
  • ½ cup granulated sugar
  • ½ teaspoon salt
Filling
  • 3 tablespoons cornstarch
  • ½ teaspoon salt
  • 2 large egg yolks
  • ¼ cup sugar
  • ½ teaspoon vanilla extract
  • ½ vanilla bean
  • ½ cup heavy cream
  • 1 ¼ cup milk
  • 2 tablespoons salted butter
Topping
  • Blueberries
  • Kiwis, finely diced
  • White chocolate

Let's get started!

  1. Preheat oven to 350°F.
  2. Whisk together egg yolks, cream and lemon extract until smooth.
  3. In the bowl of an electric mixer fitted with a paddle attachment, add flour, butter, sugar and salt. Mix until a coarse meal forms.
  4. Add the wet ingredients so that the dough holds together when pinched.
  5. Divide the dough in half and form two flat discs. Wrap each disc in plastic wrap and refrigerate for 1 hour.
  6. Roll out chilled dough, place into tart pan and finish the edges.
  7. Line the tart with plastic and fill with baking beans and blind bake the tart for 20 minutes at with the beans. Remove the beans and bake an additional 18 minutes or until well set.
  8. Cool tart completely and brush with melted white chocolate to seal the crust.
  9. To make the filling: in a small bowl mix the cornstarch, salt, yolks and half the sugar until well combined.
  10. In a medium saucepot, mix the extract, vanilla bean, cream and milk. Pour the sugar into the center and let it settle.
  11. Scald mixture and temper in the yolk mixture. Cook the filling until it thickens.
  12. Strain the filling and mix in chilled butter.
  13. Add the filling to the tart immediately and chill the tart until the filling is cold and set.
  14. Top the tart with blueberries and kiwi pieces to create a world map pattern.
