- 1 ¾ cups cake flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup dehydrated strawberry powder
- 1 cup butter
- 1 cup sugar
- 3 eggs
- ¼ cup mashed strawberries
Lemon Cupcakes

- 1 cup butter
- 1 cup sugar
- 3 eggs
- 2 tablespoons lemon zest
- 3 tablespoons lemon juice
- 1 ¾ cups self-rising flour
- ¼ cup buttermilk
Watermelon Cupcakes
Equipment- Large mixing bowl
- Medium mixing bowl
- Hand mixer
- Whisk
- Rubber spatula
- Ro’s cupcake liners
- Black candy melts in a decorating bag fitted with #1 tip
- White & green candy melts in decorating bags fitted with #2 tips
- Ro’s watermelon candy melts in a decorating bag fitted with #2 tip
- White buttercream frosting in a decorating bag fitted with #1A tip
- Ice cream scoop
- Fruit template
- ¾ cup sugar
- 1 ¼ cups all purpose flour
- 1 packet watermelon flavored gelatin (Jell-o)
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ cup + 2 tablespoons oil
- 1 egg white
- 1 teaspoon vanilla extract
- 1 cup milk
Strawberry Cupcakes
Let’s get started!
- Preheat oven to 350°F.
- In a medium bowl, whisk together flour, baking powder, salt and strawberry powder until well combined.
- In a large bowl, use a hand mixer to beat together butter and sugar until light and fluffy.
- Add eggs, one at a time, beating between each addition and scraping down the sides.
- Add mashed strawberries and mix well.
- Add ½ the dry ingredients, mix, and then add the remaining ½. Mix until well incorporated.
- Scoop the batter into cupcake liners about 2/3 full and bake for 16 minutes.
Time to decorate!
- Tape a piece of wax paper over the fruit template and then use strawberry, green, and white candy melts to pipe strawberries (PICTURE at 6:56). Allow candy melt to harden completely.
- Once cupcakes have completely cooled, use a #1A tip to pipe a dome on top of each one (PICTURE at 8:07).
- Place a strawberry candy melt topper on each cupcake.
Lemon Cupcakes
Let’s get started!
- Preheat oven to 350°F.
- In a large bowl, beat together butter and sugar until light and fluffy.
- Add eggs, one at a time, mixing well between each addition and scraping down the sides of the bowl.
- Add lemon zest and juice and beat well.
- On low speed, alternate adding the flour mixture and the buttermilk to the butter mixture, beginning and ending with the flour mixture.
- Scoop batter into cupcake liners about 2/3 full and bake for 14 to 16 minutes.
Time to decorate!
- Tape a piece of wax paper over the fruit template and then use lemon and white candy melts to pipe lemons (PICTURE at 7:09). Allow candy melt to harden completely.
- Once cupcakes have completely cooled, use a #1A tip to pipe a dome on top of each one (PICTURE at 8:07).
- Place a lemon candy melt topper on each cupcake.
Watermelon Cupcakes
Let’s get started!
- Preheat oven to 350°F.
- In a large bowl, whisk together sugar, flour, gelatin, baking powder, salt, and watermelon gelatin. Mix until well combined.
- In a medium bowl, whisk together egg whites, vanilla extract, milk and oil.
- Pour the wet ingredients into the dry and mix until well incorporated.
- Scoop the batter into cupcake liners about 2/3 full and bake for 14 to 16 minutes.
Time to decorate!
- Tape a piece of wax paper over the fruit template and then use watermelon, green, and white candy melts to pipe watermelons (PICTURE at 6:50). Allow candy melt to harden completely.
- Once cupcakes have completely cooled, use a #1A tip to pipe a dome on top of each one (PICTURE at 8:07).
- Place a watermelon candy melt topper on each cupcake.
