Yields 12 cupcakes

Things you'll need

Ingredients Cupcakes
  • 1 ½ cups all purpose flour
  • ¼ cup light cocoa powder
  • 1 tablespoon baking soda
  • ½ cup sugar
  • ½ cup coconut sugar
  • ½ teaspoon sea salt
  • ¼ cup coconut oil, warmed
  • 1 ½ tablespoons vinegar
  • 1 teaspoon vanilla extract
  • 1 cup cold water
  • White frosting
  • Purple sanding sugar
  • Hard candies (Jolly Ranchers): pink, green, blue
Geodes
  • 3 cups sugar
  • 1 cup water
  • Fondant: brown & white
  • Purple food color
Equipment
  • Large mixing bowl
  • Medium mixing bowl

Let’s get started!

Cupcakes
  1. Preheat oven to 350ºF.
  2. In a large bowl whisk together flour, cocoa powder, baking soda, sugar, coconut sugar and salt.
  3. In a small bowl, whisk coconut oil, vinegar, vanilla and water.
  4. Combine wet and dry ingredients and mix until no lumps remain.
  5. Pour the batter into cupcake liners and bake for 18 minutes.
Geodes
  1. In a medium sized sauce pot combine water and sugar and bring to a boil. Mix until the liquid is clear.
  2. Turn off the heat and stir in food coloring.
  3. Roll out squares of brown and white fondant and stack them with the brown fondant on the outside. Mold the square into a small bowl that has been lined with crumpled foil (PICTURE at 4:44).
  4. Pour a little bit of hot sugar syrup into each fondant "bowl" and cover with foil . Allow the geodes to set for 12 hours and then pour out the excess sugar syrup.
  5. Dry for another 2 hours and then cut the geodes in half.

Time to decorate!

  1. Frost cupcakes with white frosting and smooth with spatula.
  2. Sprinkle some of the cupcakes with different colored crushed jolly ranchers and then place a few larger chunks in the center (PICTURE at 8:15).
  3. Sprinkle the remaining cupcakes with purple sanding sugar, and then top with half of a geode.
  4. TaDa! These Geode Candy Cupcakes are the perfect treat to contribute to the crater good!
