Hot Chocolate Cookies

 

 

If you love Hot Chocolate you will love these rich chocolate cookies with a gooey marshmallow filled center. 

Makes 20 hot chocolate cookies

 

Things you'll need

Ingredients
  • 1 cup all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon espresso powder
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 egg, room temperature
  • 1 1/2 teaspoon vanilla extract
  • 1 tablespoon milk
  • 1 cup semi-sweet chocolate chips
  • 20 large marshmallows
  • Chopped semi-sweet chocolate, decoration

  • Baking sheets
  • Parchment paper
  • Hand mixer

Let's get started!

  1. In a medium bowl, combine the flour, cocoa powder, salt, baking soda and espresso powder. Set aside.
  2. In a large bowl using a hand mixer, cream together the butter, granulated sugar and brown sugar until light and fluffy, about 2-3 minutes. 
  3. Add the egg and vanilla, mix until combined. 
  4. Add the dry ingredients and mix until no flour streaks remain. Add the milk and mix until combined. 
  5. Pour in the chocolate chips, mix until combined.
  6. Cover with plastic wrap and refrigerate for at least 1 hour. 
  7. Preheat the oven to 350F°. Line 2 baking sheets with parchment paper.
  8. Scoop chilled dough in 2-3 tablespoon balls, and place 2 inches apart on the lined baking sheets. 
  9. Bake cookies for 9 minutes. Pull the cookies out of the oven and place one large marshmallow on top of each cookie and place back in the oven and bake 3 more minutes. 
  10. Remove the cookies from the oven and let cool for 20 minutes. Sprinkle chopped chocolate on each cookie.
