Hot Chocolate Cookies
Things you'll need
Ingredients- 1 cup all-purpose flour
- 2/3 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon espresso powder
- 1/2 cup (1 stick) unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1 egg, room temperature
- 1 1/2 teaspoon vanilla extract
- 1 tablespoon milk
- 1 cup semi-sweet chocolate chips
- 20 large marshmallows
- Chopped semi-sweet chocolate, decoration
- Baking sheets
- Parchment paper
- Hand mixer
Let's get started!
- In a medium bowl, combine the flour, cocoa powder, salt, baking soda and espresso powder. Set aside.
- In a large bowl using a hand mixer, cream together the butter, granulated sugar and brown sugar until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla, mix until combined.
- Add the dry ingredients and mix until no flour streaks remain. Add the milk and mix until combined.
- Pour in the chocolate chips, mix until combined.
- Cover with plastic wrap and refrigerate for at least 1 hour.
- Preheat the oven to 350F°. Line 2 baking sheets with parchment paper.
- Scoop chilled dough in 2-3 tablespoon balls, and place 2 inches apart on the lined baking sheets.
- Bake cookies for 9 minutes. Pull the cookies out of the oven and place one large marshmallow on top of each cookie and place back in the oven and bake 3 more minutes.
- Remove the cookies from the oven and let cool for 20 minutes. Sprinkle chopped chocolate on each cookie.
