Lord of the Rings Hobbit Muffins
Things you'll need
Ingredients Muffins- 3 ½ cups all purpose flour
- ½ cup brandy
- 1 pound butter
- 1 tablespoon caraway seeds
- ½ teaspoon ground cloves
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- Zest of 1 orange
- 1 ½ cups sugar
- 6 eggs
- Raspberries
- 1 tablespoon sugar
- ½ teaspoon lemon juice
- 3 mixing bowls
- Whisk
- Electric hand mixer
- Rubber spatula
- Small sauce pot
- Fork
- Zester
- Ice cream scoop
- Muffin baking pan
Let's get started!
- Preheat oven to 350ºF
- In a mixing bowl, whisk together flour, seeds, cloves, cinnamon, and nutmeg.
- In another bowl, beat butter and sugar until light and fluffy.
- Use a separate bowl to whisk together eggs and brandy.
- Combine the egg mixture with the butter mixture and whisk well. Use a rubber spatula to fold in flour mixture.
- Grease a muffin tray and then sprinkling it with flour. Scoop batter into the tray and then bake for 20 to 25 minutes.
- Mix raspberries, sugar, and lemon juice in a sauce pot on medium heat. Bring to a boil and stir frequently, about 5 minutes.
- Drizzle the cooled raspberry mixture onto seed cakes, or serve in a small sauce dish.
