Melted Snowman Cookies

 

 

Better hurry up to eat these cookies! The melted snowman cookies are a fun twist on a classic cream cheese sugar cookie with marshmallows and some of your favorite candies. 

Makes 30 cookies

 

Things you'll need

Cream Cheese Sugar Cookie Ingredients
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 2 ounces cream cheese, room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 1 egg yolk
  • 1 1/2 teaspoons vanilla extract
Decoration
  • 3-inch circle cookie cutter
  • Black Candy Melts
  • Royal icing: black and white
  • Haribo Sour Streamers Gummi Candy: green and red
  • Gummy orange slices
  • Mini M&Ms: green and red
  • 30 large marshmallows
  • 30 mini marshmallows

Equipment

  • 3"-inch circle cookie cutter

Let's get started!

  1. Cream Cheese Sugar Cookies: In a medium bowl, whisk together the flour, baking powder and salt.
  2. In a large bowl, with an electric mixer, beat the butter, cream cheese and sugar until light and fluffy, 3 to 5 minutes.
  3. Add the whole egg and egg yolk one at a time, beating well after each addition.
  4. Beat in the vanilla extract.
  5. On low speed, beat in the flour mixture until combined.
  6. Split the dough in half and shape each dough into a disk about 1/2"-inch thick and wrap in plastic wrap. Refrigerate for 30 minutes.
  7. Preheat the oven to 350F°. Line 4 baking sheets with parchment paper.
  8. On a lightly floured surface, roll out the dough to 1/4" inch thick. Cut out 30 cookies with the 3" inch cutter. Place the cookies 1 inch apart on the baking sheets.
  9. Freeze the cookies for 15 minutes. 
  10. Bake until the cookies are firm to the touch, but not browned at the edges, about 10-12 minutes. 
  11. Let cool on the baking sheets for 2 minutes, then transfer to a wire rack to cool completely. 

 

Time To Decorate!

  1. Marshmallow Heads: Cut the Sour Streamers Gummi Candy into thin, long strips. Connect them together to extend the length.
  2. Attach the sour strips to the bottoms of the large marshmallows using royal icing to create a scarf.
  3. Using black royal icing in a piping bag fitted with a #1 tip, pipe the snowman eyes and mouths.
  4. Cut the gummy orange slices into tiny triangles and attach them between the eyes and mouths on the marshmallows.
  5. Assemble: Fill a piping bag with white royal icing and flood the cookies with a wavy, melted outline design.
  6. Place the decorated marshmallow heads onto the wet icing and add 3 green and red Mini M&Ms for the buttons. Repeat with the rest of the cookies and allow to dry completely.
  7. Use the black royal icing to pipe two arms on each cookie.
  8. In a small bowl, melt the black Candy Melts by microwaving in 15 second increments, mixing in between. Pour into a piping bag.
  9. Top Hat: On a sheet pan lined with parchment paper, pipe some black Candy Melts onto the top of a mini marshmallow and gently tap the tray on the counter until the candy covers the marshmallow and spreads into a top hat shape. Repeat with remaining mini marshmallows and let harden at room temperature for 20 minutes.
  10. Using the white royal icing, attach the hat to the top of the large marshmallow head.
