Monster Crispy Treats

 

Let's be frank, I can't help but watch lots of spooky monster movies during this month of October. This recipe is inspired by one of the most iconic monsters and isn't a pain in the neck to make. They're mint chocolate chip flavored and they're frightfully fantastic.

Yield: Makes 12 treats

 

Things you'll need

Ingredients
  • 3 tablespoons salted butter
  • 4 ½ cups mini marshmallows (Jet-Puffed)
  • ¼ teaspoon peppermint extract
  • Green food coloring
  • 1 cup mini chocolate chips (Nestle)
Decorations
  • 1 batch Royal Icing
  • Green food coloring
  • 1 ½ cups dark coating chocolate wafers (Ghirardelli)
  • Large candy eyeballs (Wilton)
  • 12 mini marshmallows (Jet-Puffed)

Let's get started!

  1. Grease a 9x13-inch metal baking pan and line the bottom and two sides of the pan with parchment paper (leave an overhang to make it easier to take out of the pan).
  2. In a large saucepan, melt the butter over low heat and add the marshmallows. Stir constantly until the marshmallows are melted, about 6 minutes. Remove from the heat.
  3. Stir in the peppermint extract and green food coloring until well combined.
  4. Add the cereal and stir until evenly coated. Fold in the mini chocolate chips, working quickly so the chocolate does not melt.
  5. Press the mixture firmly into the bottom of the prepared pans.
  6. Let cool completely, about 25 minutes.
  7. Cut into 12 rectangles.

Time to decorate!

  1. Make the Royal Icing. Tint green and scoop into a decorating bag fitted with a #3 tip. Outline the treat with the icing and let set.
  2. Once the outline has hardened, fill in the center of the treats to make the face. Let dry completely, about 1 hour.
  3. Melt the chocolate. Line a baking sheet with wax paper.
  4. Dip 1 end of each treat into the melted chocolate for the hair and place on the baking sheet. Let dry.
  5. Scoop the remaining melted chocolate into a decorating bag fitted with a #2 tip. Using the chocolate, attach candy eyeballs to each face. Pipe eyebrow and mouth details.
  6. Cut the mini marshmallows in half crosswise. Using the green icing, attach a half on each side of the treat for the neck bolts.
