Panda Treats

 

Today I made three different Panda themed treats! I hope you enjoy them.

 

 

Things you'll need

Ingredients for Panda Macarons
  • 3/4 cup Powdered sugar
  • 1/2 cup + 2 tbps Almond flour
  • 2 Egg whites
  • 1/4 cup Sugar
  • Black food coloring

For the filling

  • 1/2 cup Heavy cream
  • 1 cup White chocolate chips

  • Decorating bags
  • Piping tips: #2A, #5
  • Sieve
Ingredients for the Panda Pannacotta
  • 1 cup Milk
  • 1 1/2 cup Heavy cream
  • 1 cup Greek yogurt
  • 6 tbsp Water
  • 3/4 cup Sugar
  • 2 packets Powdered gelatine
  • 1 tsp Vanilla extract
  • 1 tsp Almond extract
  • Candy melts: white and black
  • 1 1/2 Sphere silicone mold
  • 1 cup + 2 tbsp sugar
  • 1/2 cup All purpose flour
  • 1/3 cup Dark cocoa powder
  • 1/3 cup whole milk
  • 1/2 cup Vegetable oil
  • 1 Egg
  • 1 tsp Vanilla extract
  • 1/3 tsp Salt
  • 1/4 tsp Baking powder
  • 3 1/4" Circle cookie cutter
  • (1) Egg

Ingredients for the Panda Pudding Cups

  • 1 Box of Oreos
  • 4 Small dessert cups
  • 2 cups Whole milk
  • 1/3 cup Sugar
  • 3 tbsp Corn starch
  • 2 Pinches of salt
  • 2 tbsp Butter
  • 1/2 Vanilla bean
  • 1 cup Heavy whipping cream
  • 2 tbsp Sugar
  • Black candy melts
  • 1 oz. Ice cream scoop

 

Let's get started!

For the Panda Macarons

  1. In a medium bowl, sift together the powdered sugar and almond flour.
  2. In a large bowl, whip the egg whites until frothy then gradually add the sugar. Continue whipping until stiff peaks form.
  3. Fold in the dry ingredients into the egg whites and fold until well incorporated. 
  4. Take about 1/2 cup of the batter and dye it black.
  5. Place the white batter in a piping bag fitted with a #2A tip and the black batter in a #5 tip.
  6. Take a piece of parchment paper and trace circle on the bottom side. Place it on a baking sheet and pipe white circles on each stencil. Tap the tray to get rid of any air bubbles.
  7. Take the black batter and add the eyes, ears and nose on half of the white circles.
  8. Let it sit in room temperature for about 30-40 minutes or until the macarons form a skin.
  9. Place the tray on top of another pan to prevent the cookies from burning on the bottom  and bake in the oven 325F for about 12-18 minutes.
  10. Place the white chocolate chips in a bowl, warm the cream and pour it over the white chocolate chips. Let it sit and then mix until smooth. Let it cool completely.
  11. Pipe the filling in the between the cookies and sandwich together.

For the Panda Pannacotta

  1. In a small bowl, mix together the gelatin and water and let it sit for about 5 minutes to bloom.
  2. In a medium saucepan, mix together the milk and sugar and heat over medium-low heat.
  3. Add the gelatin in the saucepan and mix together until the gelatin has completely melted.
  4. In a large bowl, whisk together the yogurt, vanilla and almond extract and milk.
  5. Pour the gelatin mixture to the yogurt mixture and mix until well combined. 
  6. Spray the silicone mold with a nonstick spray and pour the pannacotta mixture into the cavities.
  7. Place the mold in the fridge for about 4 hours or until set.
  8. For the brownies, whisk together the flour, cocoa powder, baking powder and salt. 
  9. Add the oil, milk, vanilla and egg to the dry ingredients and mix until well combined.
  10. Bake the brownie in a 8"x8" greased and lined pan at 350F for about 15 minutes.

Time to decorate!

  1. Using the cookie cutter, cut out the bottom base for the pannacotta's.
  2. Place the pannacotta on top of the brownies.
  3. Place two black candy melts for the ears.
  4. Scoop some melted black candy melts in a piping bag and draw the eyes and nose. Use some melted white candy melt to add more details to the eyes.

For the Panda Pudding Cups

  1. In a medium saucepan, whisk together the sugar, cornstarch and two pinches of salt. While whisking, slowly pour the milk until well combined.
  2. Add the vanilla beans seeds and heat over the stove on medium-low until thickened.
  3. In a medium bowl fitted with a sieve, strain the mixture to get rid of all the clumps. 
  4. Add the butter and mix well. Cover the bowl with plastic wrap and let the mixture sit out for 15-20 minutes.
  5. In a large bowl, whip together the heavy cream and some sugar. Scoop it in a piping bag.

Time to decorate!

  1. Layer the cups in this order: crushed Oreos, pudding, crushed Oreos, pudding. 
  2. Fill the ice cream scoop with the whipped cream and lightly tap on a flat surface to get a clean shape.
  3. Scoop it on top of the cups.
  4. Take your black candy melts and add some ears, eyes and nose to the whipped cream scoop.
