Let's get started!
Donuts
In a large bowl, whisk together warm milk, yeast and sugar. Let it sit for 10 minutes to activate.
Add butter and egg yolks and mix well. Add vanilla seeds and almond extract.
Pour flour in thirds. Add salt after the first third of flour. Mix in between each addition until a dough forms.
Knead dough on a floured surface and then roll it into a ball.
Grease a bowl with cooking spray and place dough in it. Cover the bowl with plastic wrap and allow dough to sit until it has doubled in size, about 1 hour.
Roll dough out onto a floured surface to about an inch thick. Cut out 2 to 3 donuts using a large cookie cutter and then make a hole in the middle using a small cutter. Use a medium cutter to cut out the rest.
Place donuts on a parchment lined baking sheet dusted with flour. Cover them with a towel to proof for about 20 minutes.
Fill a large pot about 2/3 with oil. Heat on medium low until a candy thermometer reads 350ºF.
Brush off excess flour from the donuts using a pastry brush then use skewers to carefully place them in the hot oil.
Fry for 1 minute on each side until golden brown. Remove from oil and place onto a paper towel lined cookie sheet to drain.
Jelly filling
Whisk jam in a sauce pan over medium heat until boiling.
Mix cornstarch and water to make a slurry and whisk into the boiling jam. Whisk consistently until it thickens.
Once cooled, scoop the jelly into a decorating bag.
Glaze
Mix powdered sugar and water to desired consistency and dip donuts into glaze. Set on a cooking rack to dry.
Time to decorate!
Use light blue royal icing to pipe a Portal Aperture Logo design on a donut ring. Repeat with another ring, but with orange royal icing (PICTURE at 8:46).
For the Aperture logo detail, use a dark blue icing to pipe triangles along the blue donut. Then repeat on the orange donut using dark orange icing (PICTURE at 9:19).
On the jelly donut, pipe a dark brown circle around the edge and then fill it in. Once dry, pipe white circles around the border (PICTURE at 10:20). Once dry, pipe smaller red circles inside the white ones. Place a candle in the middle.
On another jelly donut, pipe a dark gray circle around the donut and then fill it in. Pipe the light gray details of the companion cube (PICTURE at 10:29). Use the pink icing to pipe a heart in the middle. Pipe a light grey circle and connect the plates with 4 pink lines.
