RAINBOW CAKE TRUFFLES
Makes 40 Cake Truffles
Things you'll need
Vanilla Cake- 1 stick (4 ounces) unsalted butter, room temperature
- 1 cup sugar
- 3 egg whites
- 2 teaspoons vanilla extract
- 1/4 teaspoons almond extract
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup whole milk, room temperature
Decoration
- 1 cup buttercream
- 2 cups white Candy Melts
- Food coloring powders (Suncore): red, orange, yellow, green, blue, purple
- Rainbow sprinkles (ColorKitchen)
- Two 6" inch cake pans
- Parchment paper
- Offset spatula
- Whisk
- Rubber spatula
- Hand mixer
- Melting Pot (Nerdy Nummies)
Let's get started!
- Preheat the oven to 325F°. Grease and line the cake pans.
- In a small bowl, whisk together the flour, baking powder and salt.
- In a medium bowl using hand mixer, cream together the butter, sugar and extracts until light and fluffy, 6 to 8 minutes.
- Add the egg whites to the butter mixture, mix until combined (do not over mix).
- Alternate adding the flour mixture and milk in three addition, starting and ending with the flour. Do not over mix.
- Pour batter evenly into prepared pans. Bake for 30 minutes or until toothpick comes out clean.
Time to Decorate!
- In a large bowl, crumble the cakes and add the buttercream.Mix with the hand mixer until a smooth dough forms. It should feel like cookie dough.
- Separate the cake dough evenly between 6 bowls. Add and mix the colors red, orange, yellow, green, blue and purple into each bowl until desired colors - about 1/2 teaspoons to 1 teaspoon per bowl.
- Split all the colored dough into 1/2 teaspoon pieces. Stack 6 pieces of each color starting with the red and ending with the purple and roll into a smooth ball. Repeat with the rest of the dough (about 40 balls). Chill in refrigerator for 1 hour.
- Melt the white Candy Melts in the melting pot. Dip each cake ball in the candy and sprinkle the rainbow sprinkles on top.
RAINBOW SLICE COOKIES
Makes 40 Cookies
Things you'll need
Ingredients- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 10 tablespoons butter, room temperature
- 3/4 cup granulated sugar
- 1 1/2 teaspoon vanilla extract
- 1 egg, room temperature
- Food color powder (Suncore): red, orange, yellow, green, blue, purple
- Baking sheet
- Parchment paper
- Plastic wrap
- Rolling pin
- Hand mixer
Let's get started!
- In a stand mixer fitted with a paddle attachment, cream together the butter and sugar, 2 to 3 minutes
- Add the egg, salt and vanilla extract. Mix until combined.
- With the mixer on low speed, gradually add the flour. Mix until combined.
- Separate the dough into 6 bowls, with the first bowl containing the most dough for red (about 1 cup) and gradually decreasing until the last bowl for purple (about 2 tablespoons).
- Mix color powders into each dough until you reach the desired color.
- On a piece of plastic wrap roll the purple dough into a log that is 6-inches long.
- On separate pieces of plastic wrap, roll the blue, green, yellow, orange and red doughs into rectangles that are 6 inches wide and 1/4 inch thick.
- Place the purple log on the edge of the blue rectangle and roll it up. Repeat for each color ending with the red.
- Wrap the log in plastic wrap and chill in the refrigerator for 1 hour.
- Preheat the oven to 350F°. Line the baking sheet with parchment paper.
- Slice the log into 1/4" wide slices. Cut each slice in half to create a rainbow design and place onto the sheet.
- Bake for 10-12 minutes.
RAINBOW FRUIT POPSICLES
Makes 12 popsicles
Things you'll need
- 1/2 banana
- 1/4 cup vanilla Greek yogurt
- 1/2 cup frozen raspberries
- Water, to thin out
Orange Layer
- 1/2 banana
- 1/4 cup vanilla Greek yogurt
- 1/2 cup frozen peaches
- 1/2 teaspoon orange powder (Suncore)
- Water, to thin out
Yellow Layer
- 1/2 banana
- 1/4 cup vanilla Greek yogurt
- 1/2 cup frozen pineapple
- 1/2 teaspoon yellow power (Suncore)
- Water, to thin out
Green Layer
- 1/2 banana
- 1/4 cup vanilla Greek yogurt
- 1/2 cup frozen mango
- Handful of spinach
- Water, to thin out
Blue Layer
- 1/2 banana
- 1/4 cup vanilla Greek yogurt
- 1/2 cup frozen pineapple
- 1/4 teaspoon blue powder (Suncore)
- Water, to think out
Purple Layer
- 1/2 banana
- 1/4 cup vanilla Greek yogurt
- 1/2 cup frozen mixed berries
- Water, to think out
- Two silicone popsicle molds
- 12 popsicle sticks
- Blender
Let's get started!
- For each color, add the banana and Greek yogurt to the blender. Add below ingredients for the corresponding colors and blend until smooth.
- Red: raspberries
- Orange: peaches and orange powder
- Yellow: pineapple and yellow powder
- Green: mango and spinach
- Blue: pineapple and blue powder
- Purple: mixed berries
- Pour 1 tablespoon of each color into popsicle molds starting with the red and ending with purple.
- Place popsicle sticks into the molds.
- Freeze overnight then enjoy!
RAINBOW PIZZA
Makes 1 pizza
Things you'll need
- 1 pre-made pizza dough
- 1 jar pizza sauce
- 1 bag shredded mozzarella
- 1-pint cherry tomatoes, sliced
- 1 orange bell pepper, chopped
- 1 ear of corn, cut off the cobb
- 1 head of broccoli, chopped
- 1 red onion, chopped
- Flour, for dusting
- Round pizza pan
Let's get started!
- Preheat the oven to 450F°. Dust the pizza pan with flour.
- Stretch the pizza dough to fill the pan.
- Spread a thin layer of pizza sauce over the dough 1/2" from the edges. Sprinkle the mozzarella over the sauce.
- Arrange the toppings to look like a rainbowL start with tomatoes around the edges, then bell pepper, corn, broccoli and red onion in the center.
- Bake pizza for 20-25 minutes, until edges are golden brown.
