Smart Cookie Cupcakes

Can't decide if you want a chocolate chip cookie or a cupcake? Why not both? Learn to make a cupcake that tastes just like a chocolate chip cookie and add the Smart Cookie icing decoration from the Rosanna Pansino Baking Line!
Makes 14 to 16 cupcakes
Things you'll need
Ingredients- 1 ¼ cups all purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup butter
- ½ cup cookie butter
- ½ cup sugar
- ½ cup brown sugar
- 2 eggs
- 1 tablespoon vanilla extract
- ½ cup whole milk
- ¾ cup mini chocolate chips
- Smart Cookie cupcake toppers
- Large mixing bowl
- Medium mixing bowl
- Hand mixer
- Whisk
- Rubber spatula
- Glass measuring cup
- Ro’s cupcake liners
- White frosting in a decorating bag fitted with a #1A tip
- Ice cream scoop
Let's get started!
- Preheat oven to 375°F.
- In a medium bowl, whisk together flour, baking powder and salt.
- In a large bowl, use a hand mixer to beat together butter, cookie butter, sugar and brown sugar until light and fluffy.
- Add eggs, one at a time, beating between each addition and scraping down the sides.
- Add vanilla extract and mix well.
- On low speed, alternate adding the flour mixture and the milk to the butter mixture, beginning and ending with the flour mixture.
- Fold in mini chocolate chips.
- Pour the batter into cupcake liners and bake for 14 to 16 minutes.
Time to decorate!
- Once the cupcakes have cooled completely, use buttercream frosting and a #1A tip to pipe domes on top of each (PICTURE at 3:32).
- Place a Smart Cookie topper face-up on each cupcake.
