Star Trek Cupcakes

Fruit filled chocolate, vanilla and blueberry cupcakes topped with colorful buttercream and a Starfleet insignia!

Makes 1 dozen of each cupcake

Things you'll need

Ingredients Vanilla Cupcake
  • 1 cup all purpose flour
  • 3/4 cup sugar
  • 1/2 cup milk
  • 2 eggs
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon vanilla extract
  • 1/2 stick butter
Chocolate Cupcake
  • 3/4 cup + 2 tablespoons all purpose flour
  • 3/4 cup sugar
  • 1/2 cup cocoa powder
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
Blueberry Cupcake
  • 1 1/4 cup all purpose flour
  • 3 eggs
  • 10 tablespoons sugar
  • 1/2 cup melted butter
  • 1/4 cup sour cream
  • 2 teaspoon baking powder
  • 1 pinch salt
  • 3 drops royal blue gel food coloring
  • 2 cups frozen blueberries
  • 1/2 cup sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
Cupcake Fillings
  • Lemon curd
  • Strawberry jam
  • 1 cup chocolate chips
  • 1 cup cream
  • 3 cups milk
  • 1 box vanilla pudding
Decorations
  • Red, blue, yellow buttercream frosting in piping bags
  • Yellow & gray fondant
  • Blueberries, strawberries, raspberries
Equipment
  • Hand Mixer
  • 3 large mixing bowls
  • 2 medium mixing bowls
  • Small sauce pot
  • Whisks

Let's get started!

Vanilla Cupcake
  1. Preheat oven to 350ºF.
  2. In a medium bowl, whisk together flour, baking powder, and salt, until well combined.
  3. In a separate bowl, use an electric hand mixer to cream together butter and sugar until light and fluffy.
  4. Add in eggs one at a time, mixing after each egg, and then add vanilla and almond extracts.
  5. Alternate between adding the dry ingredients and the milk to the creamed mixture bowl (1/3 dry, mix, 1/2 wet, mix, etc.).
  6. Scoop the batter into a lined cupcake tray. Bake for 18 to 20 minutes.
Chocolate Cupcake
  1. In a medium bowl, whisk together the cocoa powder, sugar, flour, baking powder, baking soda, and salt, until well combined.
  2. In a separate bowl, whisk together the egg, oil, water, and milk. Combine wet and dry ingredients.
  3. Scoop the batter into a lined cupcake tray. Bake for 18 to 20 minutes.
Blueberry Cupcakes
  1. In a small sauce pot, combine blueberries, sugar, cinnamon, and salt, and cook on medium heat for 15 to 20 minutes.
  2. In a mixing bowl, whisk together eggs and sugar.
  3. Add flour, baking powder, and salt and then whisk until well combined.
  4. Use a rubber spatula to fold in the blueberry compote, sour cream, and melted butter. Add a few drops of blue food coloring.
  5. Scoop the batter into a lined cupcake tray. Bake for 18 to 20 minutes.
Strawberry ganache
  1. Pour cream into a small sauce pot and cook on medium heat until scalding. Remove from the heat and pour over chocolate chips in a medium mixing bowl. Let sit for 3 to 5 minutes and then stir together until smooth. Refrigerate for 10 to 15 minutes.
  2. Add about 1/2 cup of strawberry jam to the ganache and mix with a rubber spatula.
Vanilla pudding
  1. In a medium mixing bowl, combine vanilla pudding mixture and milk. Whisk together and refrigerate for 10 minutes.

Time to Decorate!

  1. After all of the cupcakes have baked and cooled, use a corer to cut out their centers.
  2. Place each filling into a decorating bag with a #12 tip. Squeeze lemon curd into the vanilla cupcake, strawberry ganache into the chocolate cupcake, and vanilla pudding into the blueberry cupcake.
  3. Squeeze a dollop of yellow frosting on each vanilla cupcake. Top with 3 raspberries and then cover the raspberries with a yellow swirl (PICTURE at 8:21).
  4. Place a strawberry upside down on top of each chocolate cupcake and then cover with a swirl of red frosting (PICTURE at 8:45).
  5. Dab each blueberry cupcake with blue frosting and top with 3 to 5 blueberries. Cover the blueberries with a swirl of blue frosting (PICTURE at 8:57).
  6. Use fondant to create Star Trek insignias (PICTURE at 9:34).
  7. TaDa! These Star Trek Cupcakes are ready to live long and prosper... until it's time to be eaten!
