Strawberry Lemonade Bars
Things you'll need
For the crust- ½ cup butter (room temperature)
- ¼ cup sugar
- 1 ½ cups flour
- ¼ teaspoon vanilla extract
- A pinch of salt
Strawberry Lemonade Filling
- 1 cup fresh lemon juice
- 1 teaspoon lemon zest
- ¾ cup diced strawberries
- 1 ¼ cups sugar
- 4 large eggs
- ¼ cup flour
- ½ teaspoon baking powder
- A pinch of salt
- Powdered sugar (for dusting)
- 9x13 pan
- Hand mixer
- Blender
- Sifter
Let's get started!
Prepare the crust
- Preheat the oven to 350F, grease and line the baking pan with parchment paper.
- In a large bowl, beat the butter and sugar until light and fluffy.
- Add the flour and salt and continue beating until a dough forms.
- Place the dough into the prepared pan and press evenly onto the bottom.
- Bake in the oven for 18 minutes or until the edges are golden brown.
Make the filling
- In a blender, add the lemon juice, lemon zest, diced strawberries and sugar. Blend until smooth.
- Add the eggs and blend again.
- Add the flour, baking powder and pinch of salt and blend for another 15 seconds.
- Pour the mixture on prepared crust and bake in the oven for 35-40 minutes.
- Let it cool completely.
- Dust with some powdered sugar using the sifter.
