Unicorn Cupcakes


These unicorn cupcakes are a perfect treat for any occasion and is very easy to prepare with the help of my Unicorn Decorating Kit.

Yield: Makes 12 cupcakes


Things you'll need

  • 2 large eggs
  • 1 teaspoon almond extract
  • ½ cup coconut milk
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1 ½ cup self-rising flour
  • 1 cup sweetened shredded coconut
  • Unicorn Cupcake Decorating Kit (Ro Baking Line by Wilton)

Let's get started!

  1. Preheat the oven to 350F. Line 12 cups of a muffin in with liners.
  2. In a large bowl, whisk together the eggs, almond extract, coconut milk, granulated sugar and melted butter until well combined.
  3. Add the self-rising flour and shredded coconut until no dry streaks remain.
  4. Fill each liner two-thirds full with batter and bake until a wooden pick inserted into the center of a cupcake comes out clean, 12 to 14 minutes.
  5. Transfer to a wire rack and cool completely.

Time to decorate!

  1. Scoop some buttercream frosting into a decorating bag fitted with your piping tip of choice and frost the cupcakes.
  2. Top with the sprinkles included in the kit.
  3. Stick the unicorn horn in the middle and add two ears.
